Flavor Notes:

Bright acidity, low bitterness and low astringency. Head notes of citrus, tropical fruit with a hint of floral.  Heart notes are panela sugar and honey.  Base notes include roasted cashews, walnuts, and cookies.

About the Farm


Nestled between the Sierra Madre de Chiapas mountains and the Pacific ocean is one of the oldest growing regions of cocoa.  A small group of twenty farmers grow the prized criollo beans and have been working to revitalize their farms after Monilia nearly destroyed the crop. 


About our Partnership

Over the past decade AMCO, our local partner, has been supporting farmers in rescuing the local Mexican varieties of cocoa while introducing new varieties that are more resistant to Monilia.  They have supported building the future of Chiapas cocoa with a focus on preserving flavor and strengthening cocoa agroforestry through flavor cocoa and shade tree nurseries.

Please note, all orders have a warehouse load out charge not listed ranging from $100-200 on average, in addition to shipping.
